Butter Scones

Butter scones

Bread Flour-14 1/8 oz
Sugar-1 3/4 oz
Baking powder-3/4 oz
Salt-1/2 tsp
Lemon zest-1 tsp
Butter, cold-3 1/2 oz
Huckleberries-4 1/2 oz
Cream-7 7/8 oz
Honey-1 oz
Eggs-1 5/8 oz
Total-2lb 3oz

  1. Combine the cream, honey, and eggs, set aside.
  2. Combine the flour, sugar, baking powder, salt, and zest with your hands in a large bowl.
  3. Cut the butter into smallish pieces and work into the dry ingredients leaving chunks.
  4. Add the huckleberries or your ingredient of choice and mix evenly.
  5. Add the liquid ingredients and and use your hands to incorporate but do not over mix.
  6. Flatten into an eight inch round and cut into eight wedges.
  7. Brush lightly with egg wash and bake at 375 for 15-17 minutes or until golden brown.
