Homemade Bagel Recipe

Bread Flour-1lb 4 7/8 oz
Water-10 1/2 oz
Yeast instant-1/8 oz
Salt-1/4 oz
Total-2lb
Pot of water
Malt-3/8 oz

  1. Mix to a stiff consistancy
  2. Let rise for 30 minutes covered
  3. Divide into 3 oz portions
  4. Let rest for 20-30 minutes covered
  5. Roll and shape into bagels
  6. Let sit 12-18 hrs in fridge covered
  7. Simmer water and malt and blanch the bagels for 30-45 seconds
  8. Add desired toppings
  9. Bake at 460 for 15 minutes
