Butter scones
Bread Flour-14 1/8 oz
Sugar-1 3/4 ozBaking powder-3/4 oz
Salt-1/2 tsp
Lemon zest-1 tsp
Butter, cold-3 1/2 oz
Huckleberries-4 1/2 oz
Cream-7 7/8 oz
Honey-1 oz
Eggs-1 5/8 oz
Total-2lb 3oz
- Combine the cream, honey, and eggs, set aside.
- Combine the flour, sugar, baking powder, salt, and zest with your hands in a large bowl.
- Cut the butter into smallish pieces and work into the dry ingredients leaving chunks.
- Add the huckleberries or your ingredient of choice and mix evenly.
- Add the liquid ingredients and and use your hands to incorporate but do not over mix.
- Flatten into an eight inch round and cut into eight wedges.
- Brush lightly with egg wash and bake at 375 for 15-17 minutes or until golden brown.
