Homemade Bagel Recipe
Bread Flour-1lb 4 7/8 oz
Water-10 1/2 oz
Yeast instant-1/8 oz
Salt-1/4 oz
Total-2lb
Pot of water
Malt-3/8 oz
- Mix to a stiff consistancy
- Let rise for 30 minutes covered
- Divide into 3 oz portions
- Let rest for 20-30 minutes covered
- Roll and shape into bagels
- Let sit 12-18 hrs in fridge covered
- Simmer water and malt and blanch the bagels for 30-45 seconds
- Add desired toppings
- Bake at 460 for 15 minutes
